They will give you an approx value. A tape measure or a larger caliper will do the trick. Also if they valve jobbed the heads and you don't know how far they sank the valve job into the seat..you can measure free drop off the deck of the heads and compare it to a stock valve job and then compare the difference and that value is how far down the valve job was cut.
Just be sure to double check that shops work as if they've already done things for you and never documented it theres no telling what they have/havent done that they do/don't remember. Why Im so fussy about build books with my assemblies. It will prove vital in an event like this.
